It is obtained by fermentation of starch enzyme hydrolysate (from starches such as wheat and corn). It is obtained from the fermentation broth of the yeasts Moniliella pollinis or Trichosporonoides megachiliensis. It is stable to heat and is nonhygroscopic. It is soluble in water and is slightly soluble in alcohol. Erythritol melts between 119° and 123°. Applications 1. Drinks Erythritol is used in the development of new zero-calorie and low-calorie beverages. Erythritol can increase the sweetness, heaviness and smoothness of the drink, while reducing the bitterness, and it can also cover up other odors and improve the flavor of the drink. 2.
