It is normally obtained from whey. It may be anhydrous, contain one molecule of water of hydration, or contain a mixture of both forms if it has been prepared by a spray drying process. It is soluble in water, very slightly soluble in alcohol, and insoluble in chloroform and in ether. Application Lactose monohydrate is almost white crystalline granules or powder, odorless, slightly sweet. It’s made from whey and is mainly used in food industry, medicine and chemical reagents. There are two isomers of lactose, being monohydrate and anhydrous. Lactose monohydrate is more stable in air and is unaffected by moisture. The sweetness of α-lactose is 15% of sucrose. In food industry, lactose monohydrate functions as a flow agent, humectant, crystallization control agent, and sweetener. It is used in baked goods for flavor, browning, and tenderizing and in dry mixes as an anticaking agent. Specification Appearance White to creamy white, crystalline powder.
