It is very soluble in water and slightly soluble in ethanol. Applications Maltitol is obtained from the hydrogenation of maltose. It is a low calorific value sweetener with unique properties, and its sweetness is slightly lower than that of sucrose. 1) Maltitol is not easy to be decomposed and absorbed by human body because it is 100% soluble in water and has strong stability to acid and heat. As a low calorie carbohydrate sweetener, it is suitable for patients with diabetes, cardiovascular disease, arteriosclerosis, hypertension and obesity. 2) Maltitol, as a non fermentative sugar, can be used as an anti caries sweetener. 3) Maltitol has good moisturizing property and high viscosity, which is better than sorbitol or even glycerin. It can be used in cakes, biscuits, bread, ice cream, popsicles, drinks, candy and pickles. It can also be used as preserver, stickier, humectant and quality improver of preserved fruits, and can improve the flavor of saccharin sodium.
