It is tasteless and odorless. Swelling in cold water. Soluble in hot water. Soluble in glycerin and acetic acid, insoluble in ethanol and ether. Application 1) Edible gelatin: Gelatin is an important ingredient and additive in the food industry. It is often used as a gelling agent, stabilizer, emulsifier, thickener and clarifier in the production of meat products, cakes, ice cream, beer, juice, etc. 2) Biofilm materials: The most researched gelatin-based film materials are chitosan-gelatin blended film, gelatin-silk fibroin blended film, polylactic acid-gelatin blended film and polyvinyl alcohol-gelatin blended film, etc. These blend materials greatly improve the physical and chemical properties of gelatin and make the gelatin-based polymer membrane materials more functional. 3) Medical fiber: use other composite materials and gelatin for blending and spinning to improve the mechanical properties of gelatin-based medical fiber materials. 4) Tissue repair and replacement: Gelatin-based composite materials used as tissue engineering scaffold materials and signal molecular carriers are one of the current research hotspots of biomaterials.
