It is a fat- soluble antioxidant that can prevent the formation of oil peroxides and delay the oxidation and deterioration of animal oil, vegetable oil, fish, margarine, milk and carotenoid. The effect is better than BHA and BHT. Compared with ascorbic acid, ascorbyl palmitate has significantly enhanced antioxidant effect, because of the insertion of palmitic acid group, it has hydrophilic ascorbic acid group and lipophilic palmitate group, and then becomes a high-quality surfactant.
